A slight cake foundation, an irresistible layer of sweet & tropical pineapple, and a warmly spiced crumb topping. Desserts don't get much more satisfying than this, especially when served alongside a round of The Torridon cocktails from Shaker & Spoon's Summer Scotch 3 box.
NOTES: This is a super tasty and easy dessert to make. It serves 6-8 people and takes about 20 mins of prep time & 50 minutes in the oven. It's perfect served warm or room temp with a dollop of fresh whipped cream, vanilla ice cream, or on it's own.
INGREDIENTS
For the base:
1/2 cup AP flour
1/2 cup sugar
1/2 cup whole or 2% milk
1/4 cup melted butter
1/4 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 cup sugar

For the filling:
1 medium pineapple cut into small cubes (cored and without skin)
1/3 cup brown sugar
2 tablespoons cornstarch
1/4 cup water

For the topping:
1 stick cold butter, cubed
1/2 cup sugar
1 cup AP flour
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 cup sugar
1 cup AP flour
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon all spice
1/8 teaspoon clove (a pinch)
INSTRUCTIONS
Preheat oven to 350°F
Butter a cast iron skillet or 8" baking pan or casserole dish
To make the base:

In a medium bowl, mix together flour, sugar, milk, melted butter, baking powder, and salt.
- Pour batter into prepared baking pan and top with pineapple mixture
To make the filling:

Combine pineapple and brown sugar in a pan over medium heat. Cook until sugar melts & the mixture just starts to boil

Make a slurry by mixing cornstarch & water with a whisk and add to the pan, stirring until thickened. Remove from heat & set aside
To make the topping:

Mix the ingredients together in a bowl and work the mixture with a fork until it forms a crumbly texture. You can use your fingers but work quickly so the heat of your hands doesn't melt the butter

Spread the topping evenly over the pineapple and base

Bake at 350 degrees until golden brown (about 50 minutes). Serve with fresh whipped cream or vanilla ice cream & enjoy!
